Oven Temperatures: Gas Marks vs. Celsius vs. Fahrenheit
If you have ever tried to bake a cake from an old British cookbook, you might have been stumped by an instruction to "Bake at Gas Mark 4." Modern digital ovens rarely use these marks.
The Quick Conversion Chart
- Gas Mark 1: 275°F (140°C) - Slow Cool
- Gas Mark 4: 350°F (180°C) - Moderate (Standard for cakes)
- Gas Mark 6: 400°F (200°C) - Moderately Hot (Roasting)
- Gas Mark 9: 475°F (240°C) - Very Hot
Fan-Assisted Ovens
Remember, if you have a fan-assisted (convection) oven, you usually need to reduce the Celsius temperature by 20 degrees compared to a standard recipe to prevent burning.
